I've made quite a bit over the last couple weeks. I just haven't gotten around to posting the recipes!
So here:
Inari
I bought the premade inari shells from Lee Lee's (our local Asian market).
Aren't they beautiful!

Next is Kitsune Udon. It means "fox noodles."
I buy frozen cooked udon because I learned the hard way that I simply cannot cook dry udon. I don't know why. I also cheated and used the inari shells for the fried sweetened tofu. You can make it yourself and it's not too hard but I had them on hand. This is the broth:

Almost Traditional Pad Thai
Gazpacho Salad
It tastes just like my famous bread salad so I doubt I'll be making it again.
With the leftover tomatoes I made this:
Simple. I cooked onions and then garlic. Added chopped tomatoes, balsamic, thyme and rosemary, white wine and simmered to reduce the sauce. Tasty!
Finally, I find Joanne Weir to be kind of full of herself. I guess if I had my own cooking school TV show I could afford to be like that too. I watch her show purely to make fun of her in my head. But she did have a great recipe that I made vegetarian.
Cook onion and garlic in a saucepan. Add vegetarian sausage. Add sage and rosemary. Add crushed tomatoes, red wine and a bay leaf. After flavors have blended and vegetables softened add cream. Finally fish out the bay leaf and add parm cheese. Toss sauce with cooked penne. So delicious!
