The scanner decided to work so here's the rest.
My cousin lives in Seattle so she brought me Beecher's cheese which is by far the best cheese on the West Coast. If you ever go to Seattle you must try Beecher's.
Next, this was so good I wanted to eat it all in one sitting. I didn't.
This one one of my favorite recipes:
On the Sin City DVD Robert Rodriguez has a 10 Minute Cooking School and let me tell you homemade tortillas taste way better than anything you could ever buy in the store. Another favorite recipe.
I made the tacos one night and then I used the leftover tortillas to make this:
I topped it with homemade chipotle salsa. Easy, just chop up a can of peeled tomatoes in a blender. Add 1 or 2 chipotle peppers. I used two. Then add minced garlic and chopped onion and a pinch of sugar and salt and you're done. Don't forget to let the salsa marinate for at least an hour before serving.
