Man, video is something I'd love to know about and don't.

What do you shoot this with, and what do you edit them with?

I use my Sony cybershot which can record video in mpeg form.You definitely want a big memory card,my 512 mb stick can record up to 24 minutes.And of course some sort of video editor,i use Sony Vegas-but you can also use Windows Movie Maker for free.It's kinda buggy but very simple to use.
