So, it turns out that the Joy of Cooking is right, and you can assemble a covered fruit pie, freeze it, and then bake it at a later date without a really noticeable change in quality or taste ( Read more... )

Huh, that's kind of cool -- the whole pie freezing thing. It makes sense, though. I may have to do that -- the idea of having a few frozen apple pies around is v. tempting.

It is pretty cool, just unfortunate that I don't like this particular kind of pie. I may try doing it next year with apples.

Peach smoothies of some kind? (Canned peaches blended with frozen berries? Or frozen bananas? Or just ice, if you prefer... and maybe some milk or cream or yogurt?)

Next year I may try that. The pies seemed like a good idea at the time, since I was already eating several peaches a day.
