I passed the final practical exam last weekend with flying colors, and the final written exam tonight; there is a shiny certificate in my backpack that says I passed the course; and I am registered to take the Massachusetts practical exam on September 20: I am on my way to becoming a Massachusetts EMT

Seriously, you should just leave work on time anyway and not mention to them that your class has ended, see how long it takes them to notice. It's not like you're doing anything wrong by leaving work on time.
