100 Happy Days - Day 1: Olive Soda Bread

I'm not doing this 100 Happy Days meme photo blog so much because I don't notice and appreciate how happy I am. For me it's because online I tend to whinge rather than celebrate

Would you share your soda bread recipe with me? The basic on that can have whatever added to it... Sem's daughter has had to go gluten-free and is having trouble finding/making decent bread.

It's adapted from Jack Monroe's recipe here

I use
100 g Doves Farm Brown Bread Mix
100 g Doves Farm White Flour
1 tsp baking powder
1 tsp bicarb of soda
1 tsp xantham gum
200 ml milk
2 tsp lemon juice

And then pretty much make up as per Jacks' recipe.
