Well, the first thing I made a few years ago was my grandmother's "Chow Chow". Unlike some recipes, it is fermented like kraut and has no sugar, spice, or vinegar. It is just finely chopped cabbage, green tomato, a little fresh red pepper, and kosher salt.
I next tried kraut, and was not satisfied with it.
Then, I had great luck with fermented kosher dill pickles about 3 years ago.
