I made this up last week. It's cheap and uses up carrots. Although it does include ginger, ginger keeps for ages and you can buy it by weight, rather than having to buy a huge chunk. This soup also freezes and reheats really well

Unfortunately I have been unable to try it yet. Someone else in the house unexpectedly used the carrots. I'll let you know how it goes as soon as I make it (oo, thanks for the chili tip, that sounds good)
