One chicken, five meals

I've heard often about making one chicken last and decided to try it myself. My pictures are iphone pictures of my plates and I'm not putting recipes for things because gosh, these are simple dishes. The point of the pics is if people want to see serving sizes ( Read more... )

I also use leftover chicken bits for making chicken and noodles, chicken and dumplings, or omelette stuffing.

Erm, I might be able to remember what I did.

I fried off the raw chicken bits, then added the cooked. I added the reduced stock leaving the stove on a low heat and squeezed a lime, plus threw in some lemongrass. Added the diced peppers (used frozen defrosted under hot water in a colander) plus a handful of coriander seeds and carraway seeds. The heat came from some tabasco and cayenne pepper (I was out of fresh chilies). The last ingredient was the chopped lettuce (I had romaine in the fridge). I added a little water (100ml maybe) but not much. The low heat is to avoid much in the way of evaporation. Once the lettuce was added I cooked the noodles and to the water I threw in the 2 lime halves so the noodles tasted limey.

Not accounting making the stock reduction it took 20m to make. :)

To clarify, the noodles were cooked in a separate pan and added when almost cooked (needed an extra min or two which I wanted to do in the sauce/soup) to the pan.
