Gets them their higher level moves faster. Like Venusaur gets solar beam at level 50 but a Bulbasaur could get it at 30 or something.

I don't actually play Pokemon, but my understanding is that each form has its own twist on how it affects your stats. To optimize your stats, you'd choose to evolve depending on the Pokemon and how you want to grow it knowing how the stat system works. (I'm not sure how accurate that explanation is, however.) What I do know is that there are move learned by some earlier Pokemon that cannot be learned be their evolved form, in which case I assume you would want to hold off for those.

The Bulbapedia article would likely be of more help than I.

Like Sadly Grove said. They learn moves faster. In addition, some evolutions actually can't learn some moves that their predecessors can AT all.
