I just made my first batch of gluten-free cookies and they are waaaay better than the bought ones!

I made up my own flour and adapted the Edmonds cookbook recipe:
Flour was 4 parts rice flour to 1 part tapioca flour, 1/2tsp guar gum per cup of mixture.

125g butter
3/4c sugar
2 eggs (that's an extra egg cos rice flour soaks up liquid)
1 1/2c flour mix

Will margarine do instead of butter, as I can't eat dairy produce either. Which pisses me off as I loooooove cheese. ;P

I used margarine. I guess you can substitute sugar and eggs too, it's amazing what you can get nowdays! I have egg substitute in the cupboard for when I am out of eggs.
