Baking Day

So eventually, after two trips to the store for more ingredients, I stopped and counted all those bananas, at which time I had 36 left. (I had already used 14 in the first four loaves.) Okay, so I'm going to need another two dozen eggs, another pound of butter, I'm probably good on flour but let's get more to be sure, it keeps forever ( Read more... )

Well, we do have a dog. She barks very little, though. She also doesn't get any banana bread.

Loaves 7 & 8 are in the oven, and everything is set out for 9 & 10. I'm getting kind of worn out, though, and contemplating how nice it would be to just take a nap after these are done baking. Still... Four more batches should only take until 8-9:00. Surely I can postpone bedtime until then.

Mmmm, banana bread. It's too bad; bananas very rarely last long enough, in my home, to become suitably ripe enough for breadmaking.

I will usually obtain a few pumpkins in the fall (I usually got them from my aunts, many of whom are avid gardeners, but this year I'll have to buy them), then cook and freeze them in packets for pumpkin bread (and pie, if I'm feeling ambitious) throughout the year. But right now, I have fresh zucchini from the farmers' market, and I know what I'll be doing with that!

In short, your post is inspiring. Maybe not for a year's worth of quickbread in the freezer (it's not nearly big enough), but at least one batch of zucchini bread will do. :)

I have a chest freezer, and used to keep it stocked with food by making huge batches whenever I cooked, so that I didn't have to cook when things were busy. It's been in storage since I left Big City, until Acorn and I moved into our own house; I'm just now getting time to start stocking it again.

This batch of baking was inspired by receiving a box of 80+ bananas and half a dozen zucchini. When the local food pantry has leftover produce that won't keep until the next day they hand food out, they set it out for anyone in the community to take. My father took a box intending to give the food away to everyone we knew; after the neighbors-and-siblings market was saturated, I took the rest for baking.
