Hey Jared. It's always nice seeing an update from you. I think that your fear of losing the initial feeling or mood of a piece when you work on it in stages is valid, but there could be ways to work around that. I don't know if you have ever practiced meditation or anything like that, but if you ever have trouble getting back into a piece that you're working on, you could try focusing on the feeling that you had when you wrote it and just play around with what you wrote until you feel it again, or until it works for you. I really don't know anything about music, but what applies to writing music applies to writing anything, and when I have to come back to writing a paper that I've taken a break on, doing that always helps me even if I end up changing everything around. Anyway, I'm sure you'll be fine with or without taking my advice.
