Rosmerta took the quill she had stuck in her hair and made an note of her parchment. Swamp Soup: dry split peas, chopped onions, chopped tomatoes, jalapeno, cayenne pepper, chili powder, garlic, cumin, ground flax seeds, ginger? While she liked the flavor without the ginger, the spice added to the spicy bite of the soup. "All right, soup appears ready. Now the main course, Boo tenderloin." she said, putting the quill down. "I've got to work on that name."
Patting the tenderloin dry, she sprinkled some extra virgin olive oil before rubbing the meat with a combination of salt, pepper, rosemary and garlic. Using a skillet of oil, Rosie seared the meat on all sides before placing the whole skillet, tenderloin and all into the oven to cook for about 20 minutes.
As the meat cooked, Rosie picked up the quill and made a few notes on the parchment. She had the pumpkin beer, the Swamp Juice, soup, main dish. Dessert? "Something swampish..." she said, stick the quill back into her hair. She first thought of candy corn cookies, but with George's swamp idea, she wanted something a little more creepy and green. "I could use some fruit or nuts." Sweet wontons? Crème brûlée?
Rosie suddenly remembered an old
dessert her mother used to make that used dried fruits, nuts and honey. The dessert reminded a young Rosie of a bird's nest since the foundation was angel hair pasta, cooled in rings and then sweetened with the fruit and honey. Pulling out the ingredients, pasta, honey, dried apricots, almonds, sugar and lemon juice, she set to work. With a little color charm, they could be Swamp Nests. Smiling, Rosie pulled the quill out, writing out the recipe as well as the amounts she would need for the holiday.
