Cookbook review

rob_donoghue and debela have been pimping Nigella Express and its awesomeness. I have heard good things about it from others as well. I have yet to lay my hands on it. However, for Christmas, I got The new Cook's Illustrated American Test Kitchen Cookbook. I think senator_hatty has the same book. It's kind of the opposite of Nigella Express. We brined a turkey this year for christmas (a la Alton Brown) and it was AMAZING. It was beautiful and tasty, and I can't stand turkey normally.

Treat goat like gamey lamb and you'll be okay. Pretty much any indian curry will stand up to it, just cook it low and slow so you get the connective tissue to gelatinize.
