Oog. It's tough to keep your mouth shut when confronted by rampant racism but when it comes to the workplace, I think it's what we have to do in order to maintain working relationships. Eventually, the person will realize that they're not getting the desired response and will STFU. What's sad though is at his age I seriously doubt there is anything you can say or do to change his racist attitude.
