Personality:
The first word that comes to mind thinking of Ciel's personality is "pride". Ciel is an extremely prideful person and is certainly not afraid to show it. He takes pride in his family's name, in his company, in his social status and of course, in his own abilities. He's above common people, and he knows it- in fact, he's rarely seen interacting with people of a lower social status unless in disguise.
Despite that, it's wrong to say Ciel views poor people as inferior. He is merely acting as a noble should, and isn't particularly concerned about common folk. Rather, he isn't particularly concerned about people in general, unless he happens to somehow get tied to them by circumstances.
While he can come off as a rather cold person, the truth of the matter is that he's not exactly that. While it's true he rarely gets emotionally involved in things, he's actually prone to bouts of anger and yelling, especially at Sebastian (his butler). Furthermore, he is genuinely entertained by challenges and makes no effort to hide his amusement at them. Probably due to the fact he's very confident and prideful, and that can make him come off as pretty smug. He's also very competitive and does not like to lose.
Particularly grumpy, Ciel almost always has a sour look on his face and is certainly not someone to hide his displeasure with things- although he may be more or less polite in doing it depending on who he's dealing with. Since he's a noble, he obviously knows how to act in high society, even if he isn't someone to take part in social gatherings to begin with.
For the most part he's a serious young man. He's pretty focused on his work and loyally performs his duty, even going to great lengths just to succeed. At the end of the day, though, Ciel is still a kid and can act as such, particularly when he's annoyed and, again, mostly at Sebastian who rightfully describes him as a "selfish master". That statement is actually pretty spot-on.
Though Ciel isn't going out of his way to hurt other people, he follows his own agenda and is willing to sacrifice whoever crosses his path if need be. He isn't overly concerned with other people's feelings, even though he may show kindness to people from time to time (but even then, he doesn't admit it was an act of kindness and comes up with a reason as to why it was necessary for him/his plans/his business).
Despite being so determined and not willing to take steps back, he does still feel a hint of remorse over some of his actions, even if he doesn't feel regret. Still, he's seen explaining why each action is necessary multiple times, and sometimes, his reasoning sounds like he's trying to justify his own actions to himself than to anyone else. In short, he feels guilt, but not only doesn't he admit it, he tries to find ways to put that feeling to rest.
In general, unless he's acting a part (and it's that case, it's obviously all fake), Ciel isn't open about his deeper feelings. He hates to show weakness to pretty much anyone, and even when it comes to positive feelings such as affection, he is very recluctant to show them. At one point he even states that he has forgotten how to smile happily.
Ciel's whole motivation comes from his desire for revenge, however, it's not really revenge for his parents' death. As he says, what he wants is to make those who betrayed the Phantomhive family to experience the same pain and humiliation he was forced to endure- this is yet another proof of just how prideful he is.
Overall, he's quite a strong character. Even in the most difficult situations, Ciel is generally capable of going on and never lets what happens around him stop him.

Before talking about Ciel's past, it's necessary to talk about his family. The Phantomhives are a noble family (Ciel's title is "Earl"), and they work directly for the Queen. They are to "ease the Queen's worries"-- and to sum it up, what it means is to take care of all matters pertaining Britain's underworld and deal with it in whatever way is necessary- and of course, making sure it never reaches the public eye. In a way, you could say they are to rule over the Underworld's dealings and the like, investigating if something's up, and generally look into any suspicious matter. Because of this they gained the name of "the Queen's watchdogs". While the Phantomhives are generally understood to be PEOPLE YOU DO NOT MESS WITH, it goes without saying that they certainly do have enemies, and even amongst those who KNOW about their role (as it's not exactly common knowledge) they aren't viewed exactly in favorable light. They have allies as well, certainly, but it's safe to say that rather than feeling loyal to them it's safe to say that they're merely working for their own convenience.
That being said! Ciel is the son of Rachel and Vincent Phantomhive, and despite the sort of family he comes from, he has lived a perfectly normal childhood until his 10th birthday. During that evening some people we don't know the identity of yet broke in the Phantomhive manor, set the house on fire and killed pretty much everyone, including Ciel's parents. Of course, Ciel survived, but he was kidnapped instead and sold as a slave. At this point, canon is still vague about what happened EXACTLY during that time, but he eventually found himself in the hands of a cult that wanted to use him, as well as other kids, as sacrifical lambs. Again, canon is vague about it! But we know he witnessed many traumatic events, that he was malnourished and that he was branded with a mark. He would have died like the other kids, but right in the middle of the ritual where he was to be sacrificed, he managed to accidentally summon a demon and form a contract with him. In exchange for Ciel's soul, the demon was to serve Ciel and obey his every order until he got his revenge against the people who wronged him.
Under Ciel's orders the demon killed all the people who were in the room, took the name "Sebastian" and started to serve Ciel as his butler after he brought him back home. Despite his young age, Ciel wasted no time and took on the job of the Queen's watchdog-- largely due to the fact it would help him find the people he was seeking revenge on. Along with that, Ciel also started the "Funtom Company", a company that sells toys as well as sweet, and proved his good business sense by turning it into a very successful company in very little time.
Kuroshitsuji's manga deals with a few cases! Not counting the whole introduction and going straight to the most relevant one, we had the Jack the Ripper Arc, the Curry contest Arc, Noah's Ark Circus Arc and Murder mistery Arc (there is another Arc going on in the manga right now, but as I'm taking Ciel right before it, I'm not counting it). I am going to try to sum them up to most important points as Kuroshitsuji as lots of wacky anticst that ultimately aren't really all that relevant to the character, and this would end up being a tad bit too long otherwise. If you want me to write more details down, just let me know.
The Jack the Ripper arc is where we first see "Shinigamis", death gods that are apparently quite at odds with demons. The Shinigami in question is Grell Suthcliff, who reveals herself (note: Grell is biologically male, but is quite vocal about considering herself a woman) to be one half of the Jack the Ripper duo. The other half (and original, as the two met after she killed the first victim) being Angelina Durless (also known as "Madam Red"), Ciel's aunt. Once Ciel and Sebastian find the identity of the two, they are forced in a fight in which Angelina eventually almost kills her nephew, but gets killed by Grell instead after she hesitates since she doesn't have the courage to kill a family member. The fight continues between the butler and the death god, and comes to an end only when it gets interrupted by William T. Spears, another Shinigami, who arrests Grell for breaking the death gods' rules.
In the final chapter of the arc, Ciel attends his aunt's funeral and gives a speech about how he sees everyone, even members of his family, as expendable pieces in a chessboard and that he's ready to step on everyone to reach his goal. Despite those words, though, it's quite clear Ciel is hurt by the loss of his aunt, and this is the first instance in which we see Ciel's denial coping mechanism at work (rather than admitting he's hurt or face his pain, Ciel is generally more likely to find an excuse, and voice those excuses, as to why a certain thing was necessary and so on).
The Curry Contest Arc is a lot less influential, and it's only worth mentioning because Soma, who the arc revolves around, eventually manages to force his way into Ciel's life. To sum it up, it deals with a mysterious person beating up english gentlemen. Because of messages left by the culprit, the Indian community is immediately thought responsible for this, and it's while investigating it that Ciel ends up meeting Soma and his servant, Agni. Soma is spoiled, loud and annoying, and he ends up inviting himself in Ciel's manor due to traditions from his place. Eventually they find out Agni is the one responsible for the beating ups, and that he's doing it because he's being blackmailed into it by an English business who wants to win a royal warrant on curry.
To free Agni from his agreement, Ciel has the funtom company enter the curry contest in which the prize for winning is said royal warrant and thanks to Sebastian's culinary abilities and Soma's knowledge of curry, they eventually win and free Angi from his agreement.
After this Arc, Soma ends up forcefully sticking around Ciel, and as he's particularly great at causing troubles, Ciel ends up tricking him into working for him at his town house, instead of staying with him in the Phantomhive manor.
In the Noah's Ark Circus arc, ciel has to investigate about children mysteriously disappearing along with the appearence of a certain circus crew. In this arc, he infiltrates in the circus to find hints about the missing children, and eventually finds hint that leads to Baron Kelvin, adoptive father of almost all of the circus crew. Baron Kelvin is a sick man who has been obsessed with Ciel ever since he met him at a charity auction with his father, and although he was supposed to be there during the ritual in which Ciel contracted Sebastian, because he was bedridden at the time he was unable to attend. While normal people would thing "oh, good, at least I survived!" Baron Kelvin was upset because he missed the chance to be killed by Ciel, and so he replicated in his basement the room in which the ritual was held, hoping he will eventually find Ciel and get a chance to be killed by him in the same way he killed everyone else in that day. Needless to say, his wish gets granted. While Ciel does manage to find the missing children, during the final chapters of the arc he ends up being triggered, and in that situation he ends up ordering Sebastian to set the mansion on fire and kill everyone in it, including the children.
The circus Arc is probably the most important one so far, as it's the first one in which we see Ciel actually ordering to kill innocent people. While Ciel later on justifies it as an act of mercy toward the children, who were too traumatized by what had happened to them to be able to go on with his life, it's obvious he acted on impulse and out of a desire of earesing what was causing him pain. While Ciel firmly believes he did the right thing (or convince himself he did, anyway. Remember the denial coping mechanism?), there are a lot of subtle hints that point to him actually feeling guilty. Amongst other things, this is the arc in where we meet Snake, one of the member of the circus crew (but not one of Baron Kelvin's adoptive children). Snake is the only member of the crew that actually survives this arc, as everyone else ends up being killed by either the Phantomhive servants, or by Sebastian under Ciel's orders.
The murder mystery arc is a direct consequence of Ciel's action, as since he disobeyed the Queen (she wanted to bring the queen's back home), she is now trusting him less and keeping a close eye on him. It deals with him having to host a dinner for a special guest under the Queen's orders, and having said guest killed. The whole arc revolves around Ciel and, surprise, Arthur Conan Doyle trying to solve the mystery of that murder as well as other that happen in the house right after. While Ciel manages to frame one of the other guestes for it, truth is the culprit was none other than one of the Queen's butlers, who was trying to put Ciel in troubles and frame him for it.
At the end of this arc we see Snake again who ends up becoming Ciel's footman. Snake originally goes to the Phantomhive mantion in order to seek revenge for his friends that suddenly disappeared, but after Ciel lies to him and says he's also looking for them and will help them, he joins him instead.
