Have you ever substituted red onion for yellow or white in either guac? I like the idea of using it for color, but it's usually a sweeter flavor, and I don't know if it will make the guac too sweet.
If you're not going to use the hot sauce or peppers, I'd use white or yellow onions for the kick, because red are sweet as sugar relatively. For more color, you can probably use a little plain red pepper ...
