Pumpkin Bread

'Tis the season!

A good 80% of the time when somebody wants a recipe from me, it's this one. Actually, it belongs to my brother hyniof; I am apparently just the person who was successful at nagging him to give me a copy.

OK:

I'll skip the usual preliminaries--get a pumpkin, render it down, all that--and get right to the recipe.

3 1/2 cups of flour
1 1/2 tsps of salt
3 cups of sugar
2 tsps of baking soda
1 Tbsp of cinnamon
1 Tbsp of nutmeg
1/2 tsp of ginger
1 tsp of baking powder

Combine all these ingredients in a big bowl, then make a well in the middle into which you should pour:

2/3 cup of water
1 cup of cooking oil
4 eggs, unbeaten
2 cups of pumpkin

You can also throw in 2 cups of "nutmeats" here if you wanna, but I never have.

So, you mix all this stuff together "until well blended." You then greaes and flour 2 loaf pans, pour the stuff in, and bake 'em at 350 degrees for 1 1/4 to 1 1/2 hours. I always rotate the pans at the 1 hour mark because the back of our oven is hotter than the front. And that oughtta do it.

ETA: my brother must have the 9x5 inch loaf pans. If you have 8x4 inch loaf pans like I do, then you'll have to make some muffins or something with the excess. It also works to make one 8x4 inch loaf and one Bundt pan.

ETA again to add: One of those little 15 or 16 oz cans of pumpkin (100% pumpkin or cooked pumpkin or whatever, not pumpkin pie filling or pumpkin pie mix) works perfectly well, if cooking and mashing the jack-o-lantern isn't your invariable Nov. 1 routine. :-) Also, I typically use whole wheat flour instead of all-purpose in this, and it turns out just fine.
