On a whim, I bought golden beets today. They're currently cooling their heels in my fridge while I decide what to do with them. Anyone have any good golden beet recipes?
ooo, lucky you. Slice them and serve them with a dressing of a mild balsamic vinegar and walnut oil, with a little salt and just a sprinkle of garlic powder. chopped parsley for garnish.
I like rubbing them with a little olive oil, salt, and pepper. Then I stick them in a 350 degree over for 45 minutes, or until they're fork-tender. Take them out, and let cool enough for you to be able to handle them without burning your fingers. Cut off the ends, and peel them (roasting 'em with the skins on lets you easily peel them after wards).
I cut the beets into wedge pieces, and use them on salads, like: over washed baby spinach greens, with crumbles of a tangy-flavored cheese like feta (blue cheeses or goat cheese can also be nice), some chopped nuts (I like to use almonds, but feel free to experiment). And I finish with a simple olive oil and balsamic vinegar dressing (2-to-1 proportion of olive oil to vinegar, and a sprinkling of salt and pepper to taste. If you want to bump up the flavors, add in a tsp. of a good mustard, and mix the dressing well before adding it to your salad.)
