I did a couple of searches for rengosalata recipes, but all the results keep getting returned in Italian. Awesome. Does anyone have a recipe for it that they wouldn't mind sharing with me... that's in English? Thanks.

Herring Salad/ Renkosalata

Herrings have very fine bones in the flesh. If you can get ready-filleted smoked herring, go ahead and use it.

Ingredients:

4 smoked herrings
milk
1 lb. potatoes, cubed and boiled
1 onion, thinly sliced into rings
1 green pepper, thinly sliced into rings
1/3 cup chopped parsley
4 tbsp. olive oil
2 tbsp. vinegar

Soak the herring in enough milk to cover them for 8 hours. Drain them; remove the skin and bones then cut the fillets into small pieces.

In a large mixing bowl, toss the potatoes, onions, green peppers and parsley with the herring and the oil & vinegar. You may add salt and pepper to taste but smoked herring is a very salty fish so try it first.
