The pie. It betrayed me.

Today I found myself craving some apple pie, so I decided to spend my day off baking one from scratch (crust, filling, everything).  I turned to my trusty Baker's Wife cookbook, which has never steered me wrong in the past.

After three hours of apple peeling, crust rolling, and finally, dish washing, I tasted the pie.

Aw, that sucks. :( I share your qualms about the heavy cream. Maybe the Baker's Wife was having an off day?

Ahhh, I guess even she is entitled to one.

The pie actually tasted better after being refrigerated over night, though, so I still have faith in her. :)

heavy cream is pretty standard in apple pie filling. It's not a lot, and some recipes just use more butter.

I always find apple pie recipes require some tweaking since they are kind of bland. I like a crispier, sugarier filling that sometimes requires making something more like apple crisp inside a pie shell then anything else.

perhaps for another day though. One pie making experience per day is probably plenty.

Hmmm, I've only ever used one other apple pie recipe, and it's the one my mom has written down in her recipe cards. It doesn't include heavy cream, and for some reason, the Baker's Wife made a huge deal out of the inclusion of heavy cream (like, "OMG! NO ONE WILL EVER GUESS THAT THE REASON THIS PIE IS SO RICH IS THE HEAVY CREAM! *evil laughter*"), so I just assumed it was something out of the ordinary.

It was actually pretty yummy this morning for breakfast (because the fact that it tasted bad last night apparently did not deter me from trying it again this morning), so all is good. :D
