I'm thinking meatloaf as well, using rice to help as a binding agent will make the ground beef go farther... then if I make the filling at the same time as the loaves, stuffed peppers. I have whole red and green ones in the freezer I was going to roast eventually, but meh. Eggs at least one night for sure in either quiche or omelet form... It's all doable, it just takes time and planning.
(Of course it would be too much to ask to have some form of diet allowance from his mother... sigh.)
