miss_behave and I were discussing garlic on Thursday, when lis0r pointed us towards a recipe for moretum, a Roman dish involving cheese and garlic which is mentioned in Virgil's Aeniad. jervaulx was in the kitchen at the time, looked over a hardcopy and immediately rustled up her own riff, which she modestly dubbed:

Actually I think it unlikely that the Romans used celery leaf in this recipie. I suspect that the proper ingrediant is lovage, a near relative to celery that the Romans were extremely fond of. Regardless of whether I'm right or not I would recommend using lovage as it has a far superior flavour to the relatively tasteless modern celery.
