Frijoles

I grew up in Texas. And in Texas, beef is king. But beans ain't far behind.

I've spent the last twelve years looking for a truly great pot of frijoles, or pinto beans. I asked my mother for her recipe, but this is what I got:



* Take some beans
* Wash and soak them
* Put them in a pot with some salt pork
* Cook them until they're done.

She added: "You might have to mash them up a little to make them taste better."

I've been working on my own recipe:

* 1 pound bacon, diced and cooked to mostly crispy
* 2 pounds beans, washed and soaked
* 2 T crushed/minced garlic
* 6 dried red peppers
* 3 T chipotle Tobasco sauce
* 1 can chicken broth
* Salt and pepper to taste

Combine everything in a crock pot and add enough water to cover everything. Cook for several hours. As my mother would say: you might have to mash them up a little to make them taste better. It's not perfect, but it's a start!
