Trying to prepare some vegetabley freezable stuff today.
I've got
Braised Red Cabbage Spinach Vegetable Kugel Broccoli Kugel with more eggs, less mayo
And a several
Vegetable Pies And also a batch of challah and a pineapple cake.
Eh. So so on the accomplishment list. But I had to do a shopping before I could start, so that took away time

Pineapple Cake
1/2 cup oil
2/3 cup crushed pineapple, with juice
1/4 tsp. baking soda
1 3/4 cup flour
1 1/4 cup sugar
2 eggs, separated
1 1/2 tsp. baking powder
1 tsp. vanilla
Beat egg whites until stiff. Mix together oil, sugar, egg yolks and vanilla. Mix the baking soda into the pineapple. Put the baking powder into the flour. Alternate into the oil the flour and the pineapple, beginning and ending with the flour. Fold in the egg whites.
Bake in small cake pan at 350F until done
Variations/ Short Cuts:
Double it for a 9x13 cake.
