I'm starting to figure out stir fry. In theory it's supposed to be one of the easiest things to do but I made a few too-bland ones recently so I thought I'd write this latest one up since it worked a lot better

Oh man, stir fry is my fav. I usually put in meat first (if raw and not fish), then onions, then other veggies, and last rice and an egg. I also use lots (like half a cup) of teriyaki sauce and just a bit of oil. Sometimes I add stuff like curry, basil, soy sauce ... whatever happens to be in the cabinet. My advice is don't worry about measurements or thickening stuff or whatever - it's not baking. Just throw it all in and consume. Also, an egg works great to soak up the rest of the sauce in the bottom of the pan.

if you're worried about bland, marinate the meat first (pref. overnight) in whatever you plan to use as sauce. it also won't dry out as quickly when cooked over high heat!
another way to add flavor is to use sesame oil instead of olive or vegetable oil. you can also get a sesame-soy flavor by adding in actual sesame seeds to the pan. mmmdelicious.
Mom says dissolve cornstarch in a little liquid and stir into remaining sauce to thicken (not flour, flour has lumps). Also, add more veggies--green pea pods, broccoli, spinach, chard, other cooking greens. Enjoy!
