Yes, everything but the kale keeps for quite a while, and the kale from last week seems to be hanging in there. But much of the rest of the stuff has already been in my house for 3-4 weeks and needs to get et.
Kale chips are very tasty and easy (the web should provide a recipe)
I make squash kibbe and a squash casserole from moosewood called chilean squash (the former is under my recipe tag, the other might be too) with butternut.

The butternut and apple recipe looks delicious but sweet -- rather like a blend between an apple pie and pumpkin pie, without the crust. I'm more looking for entrees at the moment, but I'll definitely have to try it.
I've heard people rave about kale chips before, but haven't been able to wrap my brain around the concept. Sounds like I should give them a try ...
Meanwhile, my house has zero squash, potatoes, onions, or kale -- and I told my Thanksgiving hostess that I'd handle the veggies. Before I go out and buy such things, would you consider making a small donation in kind, and we can figure out (perhaps over email rather than LJ) how to turn this into a barter of sorts (e.g., would you like one of my apple cakes, which you've enjoyed before?) :-)

Sadly, I can't remember that website for recipe suggestions. Most of the stuff on your list will keep a while, though, so don't rush to eat it all!
