You can just cook the rice in the slow cooker too. Saves even more water, and the rice will take on more of the flavours. I would probably toast the spices too to get more flavour, as well as at least browning the onion and green pepper.

I think I can actually brown the veggies directly in the slow cooker can't I? Just turn it on high and give it a chance to heat up, I guess. I'm going to have to wait probably about almost two weeks to try again because we still have left overs. Making it all together is my goal though.
I'm not entirely sure how that would work, as I am not sure if the slow cooker would get to the right temp, plus, you usually need a bit of oil to help with the browning, and that could add too much oil into the final product.
