Anything by Cook's Illustrated has the best recipes I've ever tried, plus tons of instructions of basic cooking technique. I don't bother with anything else.

apparently you have to not only put the oven on the broil setting but but put the food at the bottom of the oven. who knew?

My experience is that gas ovens generally have their broilers in the bottom drawer, whereas electric ovens have a seperate heating element in the top of the regular oven compartment.

Broiling rules. Basically it's upside-down grilling. Great for veggies.
