I got this one from Linnyloplop on LJ. It's so good!

Pumpkin Chocolate Chip Cookies
1 can pumpkin (All pie or similar)
1 tsp baking soda
2 eggs
2 c. sugar
1 c. veg oil
4 c. flour
2 tsp cinnamon
4 tsp baking powder
1 tsp salt
2 tsp vanilla extract
2 tbsp milk
12 oz pkg chocolate chips

Directions:

Mix pumpkin, soda and eggs. Add all other ingredients except for chocolate chips. Mix well, then add chips. Drop by spoonfuls onto cookie sheet, bake at 375 degrees for 12 minutes. They will be cake-like.

Good luck with the holiday entertaining! Definitely let us know your progress as you go along!
