there is absolutely no way i could disagree with someone who came up to me right now and said, "emily, you've been eating too many beets and drinking excessively". i couldn't say, "no you're wrong", i couldn't even say, "if you looked at it differently you'd see that...." that person would be right. too many beets, too much booze

i used to boil. but i've taken to just baking them (both options are delicious, i just prefer baking today). scrub them clean, and cut off the top and set it with the top down in a kind of deep baking dish (i'm not sure the depth matters) covered in tin foil (this makes it so you don't have to clean the baking dish) with a drizzle of olive oil on each one. just i ususally go for about 350 for 45 minutes, but it depends if the beets are big or small. but check in! they might be done sooner. eat hot or chill and eat cold. ain't nothing wrong with beets.
