Breakfast bar Recipe?

Hey ladies-I'm looking for some protein-rich breakfast bars/muffin type recipe for the kids. They eat a very carb heavy breakfast (cereal, pancakes/waffles, bagels) and do get some protein w/yogurt, bacon/sausage (occasionally) but Eli won't eat eggs and I feel like he burns through his energy reserves quickly in the morning. These are really good -- disguised eggs - and you can definitely play with the mix ins. Another option that I do sometimes is mix an egg into oatmeal while it's cooking. We also make French toast for the kids almost every morning (Trader Joe's has a pretty good frozen version that we use as backup.

I was going to suggest french toast too, as a way to sneak some eggs in if need be. We also do a lot of protein smoothies (because the kids can gulp them down quick).

I made these protein energy bites from Pinterest a while back and they were a big hit at my house:

This is very California nutty-crunchy, but I remember having some kind of awesome tofu French toast sticks when I was out there. Guessing tofu sticks, firm, tossed in sugar/cinnamon and some kind of butter/oil then baked, served with maple syrup.

Do they like cream cheese? My kids like cream cheese on waffles, actually.

I make these cookies, doubling the recipe so that I use the full can of pumpkin, and keep them in the freezer (take them out the night before and put them in a closed container or ziploc to defrost):

I make it easier by subbing the equivalent of pumpkin pie spice rather than the cinnamon/cloves/nutmeg separately. Also I just put in raisins and then just 3 chocolate chips on top of each cookie.

They don't have lots of protein, but they are mostly oatmeal and a little bit of wheat flour. They do have a decent amount of sugar though, but I'm ok with that -- they definitely aren't as tasty as a regular cookie but my kids like them for breakfast with milk. I tried making another recipe that had honey instead of sugar, and it just wasn't that tasty.

Thanks for the recipe. I will look into it. Yes, they like cream cheese on bagels and sometimes Eli will eat it with jelly, so at least we have that option!

See if he'll eat cream cheese on whole wheat toast, or cream cheese on multigrain waffles then. Bagels are so huge and carby, he'll probably get more protein eating 2-3 waffles with cream cheese than one bagel with cream cheese.

Would they eat a tofu scramble instead of eggs? I'm trying to think of things I eat myself for breakfast -

protein smoothie with whey and fruit/veggies
eggs of different varieties
cottage cheese with fruit
Keifer/Greek yogurt/Skyr

What about the chia seed pudding made with chia seeds and almond milk? There is also chia seed powder that you can add to smoothies, similar to a whey, or in addition to whey.

There are also some protein fortified breads, but they tend to be on the nuttier side, but I like them. I've also seen protein fortified English muffins, but I try to avoid bagels and muffins so I've never tried them. Could be an option to swap out for bagels maybe?

These are all great ideas Laura--thank you. Eli has pretty significant textural issues with food (so do I) so things like chia seeds and tofu may not go over well. But maybe worth a try. I like the idea of protein fortified bread!
