ooh, how'd you prepare your cabbage and parsley salad? i'm always looking for new ways to enjoy cabbage. :)
btw, to make the broccoli soup less bland, try a squeeze of lemon before serving. or maybe a splash of white wine if that's more your fancy. to get a creamy texture, you can try alternative milks (oat is nice and creamy and has a pretty neutral flavor) or kuzu or arrowroot to give it that creamy mouth feel.
I actually just cut up the cabbage and the parsley (the flat kind) mixed it together with a lemon peppercorn dressing (that I bought instead of making to save time), and some salt.
I did make a scallion, cayenne pepper oil for the soup which I added to the top before eating. It helped, but maybe I needed to add more each time. I will have to explore alternative milks.
i've heard good things about vegan-rella, but i'm trying to stay away from processed products in general. depending on what you want to accomplish from the cheese, there are other things you can substitute like mochi (melted for a gooey texture), blended tofu (for creaminess) or even yogurt (which doesn't contain any lactose, so it shouldn't irritate your tummy).
yeah! i love all the talk about food. we should all get together and write a book! like the one you were telling me about Cat that involves meal plans etc. i think we could really make it happen!
Yeah, winnie's post reminded me that I wanted to keep posting about my adventures with the veggie box. It is in some ways answering some of my concerns about not knowing what to get at the store. Since I have certain vegetables forced on me, I just search for recipes that look good and go get that stuff. It is broading the kinds of foods I would think to cook. And some of the dishes have been so good I would totally make them again. Yay new eating habits!
i rather like the idea of a local food box... especially if you are getting it now, in winter! a friend of my house here in Portland runs a CSA in the city. he has a few different plots and uses mostly a bicycle to get around as well as deliver food. its' pretty awesome, but only available in the winter.
anyhow that's beside the point. local food is best for so many reasons. primarily b/c it's kinda absurd to eat food grown in another country that has to be shipped to us by plane/train/truck, when there is so much food around us that is not getting eaten. even if you do feel more confident about the veggies, i highly suggest keeping up the box and focusing on feeding yourself food that is in season locally. not only is it environmentally conscious, but health conscious as well. kinda like eating local honey. and a little weight in the winter is good for ya - think hibernation =)
