I don't have any good non-fat suggestions, but I can tell you that my SO (Darthhellokitty) has her gallballder taken out a few months ago and recovered quickly and feels great. In fact after having it taken out she realized that it had been causing problems for a long time even before it started getting painful.

Fruit and veggies. Roasting is a no-fat cooking method that would caramelize many things nicely, giving extra flavor without the fat. I don't know your sentiments toward squash, but that could work, too. Ask the doc about protein sources, too. Skinned chicken breast in fat-free broth with veggies and spices would work. Spices aren't fatty!

Ok so it is a leetle out of your way, but - bay area's best evar frozen yogurt. Actually tastes like yogurt rather than low-fat ice cream. Their non-fat natural is really awesome. And they put tasty things on them (most of which should be fat free but probably not the chocolate shavings or the granola)

Do you still have that recipe for vegetarian stuffed green peppers that I made while I was out there? It's low fat to begin with (except for the cheese, which I go overboard on), and to make it no-fat:

Swap out the chicken broth for water with herbs and spices.

Swap out the olive oil for ... hurm. Water, I suppose. Or just dice the onions up really fine and skip the part where you saute them.

Lose the cheese. Or use non-fat cheese.
