Trapped by food

I've been doing a lot of thinking about the dietary restrictions I should follow. I'm not careful, and things have gotten out of control. There is strong evidence that Asperger's (which, come May 2013, will officially be simply Autism Spectrum Disorder) is, at least to some extent effected by diet. Your diet sounds a lot like mine these days - I've found that what little tolerance I used to have of fats and preservatives is quickly diminishing as I age ( ... )

We do a lot of crock-pot meals, given our work schedules. It means we can use meats that are comparatively cheap and make dinner and several lunches all at once. As far as beans and lentils go... I wish I liked them. I'll eat them, but I've never had them where the texture was something I actually enjoyed. And I've tried a lot of different methods. Chili, if I use 95% lean beef, or venison, is at least low-fat enough that it doesn't make Jess or I sick. And, yeah, fat-content is a major problem for us, too ( ... )

No wine, eh? That's a tough one. What about wine-based stuff, like vinegars? I've discovered that I'm living off mirin these days - one cucumber, cut thin, 1 tb mirin, 1 tsp soy sauce, a sprinkle of black pepper and cayenne and I'm pretty much good-to-go.

Do you have any issues with green foods other than celery/iceberg lettuce? Because that would open a lot of doors - beans, peas, sugar snaps, kale, spinach, arugula, broccoli... they're good, cheap sources of vitamins and calcium, and they freeze nicely (for the most part).

I feel ya on the texture thing with beans/lentils - I find that, especially in long-cooking dishes, they're gritty and mushy - yuck. I've found some really great recipes for bean salads, though - chickpeas or cannelini beans with fresh tomatoes and a little parsley, that kind of thing. Lentil soup, though? Or whole-bean chili? Ewww...

Any issues with herbs and spices?

No wine. instant headache. I'm allowed as much tequila, rum, mead, and even bourbon and whiskey as I want. distilling gets rid of any gluten or molds there might be ( ... )
