It takes less dough, I'm fairly certain. (Not that this helps you now, of course. :)

I wouldn't think that people would get weird about ginger juice in apple pie. Did they? I'm sure it complements apples quite well... ginger always does well in cooked apple and sweet potato dishes, as long as it's done correctly.
