      As none of you know, Yr. Stalwart Protagonist has been trying to eat healthier, of late. The problem is that I realized, somewhere along the way, that I was eating too much crap, and I've noticed my health suffering for it in small ways. Just a list of Rachel Ray's 30 minute meals. Many of which
my girlfriend and I have made. Some of her shit isn't as easy as
she makes it out to be, but there's quite a few that are like 1 sauce pan
and 1 frying pan (and your fork to eat).

Alton Brown has a meatball recipe on there that is pretty damn
good. With your limited kitchen arsenal, I'd stay away from Giada's
stuff - she goes nuts with her italian-ness.

My girlfriend has a cookbook that has some healthier things that we found.
Including an actual 'good-for-you' Mac&Cheese with like 50% of the fat/calories/death than normal.

I'll skim through the recipes we've collected and get you some.
We've always had a similar taste in food, so I'm pretty sure I
have a recipe or two that you'll keep.

I've been trying to think of something that would fit your limits all day, as my kitchen is pretty much the antithesis of your description. Tonight's dinner just about fit, though.
Spinach burgers:
1 package frozen chopped spinach or one bag fresh baby spinach
cook until either thawed in the frozen spinach case, or wilted in the fresh version. Remove from heat and drain excess liquid. Add one egg, salt and pepper, some grated hard cheese (a couple of tablespoons worth), and either matza meal or bread crumbs (about 1/4 cup of crumbs or meal). Stir up and fry in a small amount of oil until brown on one side, then put cheese on it (preferably pepper jack or a sharp cheddar) until the other side is browned and the cheese is melted. The center of the burger is better cooked through if you can cover the pan while it cooks. Served on some sort of whole grain bread with pesto makes a good mix.
