Ruth is forever saddened everytime we walk down the cookie aisle and she passes by her old favourite (non-vegan) cookie; Jam tarlets. With this heart-breakingly forlorn look upon her face. Well, we can't have that now, can we? I had a day off today (finally!), and got around to some very well deserved baking.

Mmm i saw your post about the custard tarts earlier, how did they turn out taste-wise? I miss custard tarts i do! And lemon tarts too, mmmm.

They didn't set as much as I would of liked.. but then again I hadn't had them in the fridge very long before I gobbled one down. The custard filling is not-so much like a traditional (egg-y) custard tart filling, but it was still very yummy!

Next time, I think I will try to do something to them to make the custard more jelly like. (I didn't do anything extra to the custard. Just made it, cooled it in the fridge, then filled the cooled casings) Because that's what I was really craving!

It was.. not so much like traditional custard. More (funnily enough) like tart custard, but without the solid-ness. (I checked them this morning after a night in the fridge, and they're still runny!) But it was nice... it would be delicious hot over apple pie with some soy ice-cream <3 <3

*drools* They look fantastic. Recipes? lol

I know that when I want thicker custard, I just increase the amount of custard powder I put in. That usually gets it closer to the consistency of the custard tart kind of custard. I'd put it in the tart shells while it was still warm so it would develop a 'skin' on top. Maybe baking them would firm the custard up?
