Sometimes I find that by focusing on the "good" foods, and finding yummy recipes that feature them, it makes the "diet" aspect less prominent. You are looking at it the right way though - it's a lifestyle change, not a diet and this is for your benefit and it's a GOOD thing! :o)
Maybe instead of telling people "Oh no thank you, I'm not allowed to eat that." just decline politely and say "No thank you. I'm enjoying *insert food you can have*." That way they're not doing the "Oh my gosh! I could never survive without it!" or "Oh one tiny bit won't hurt you..." crap.
But I understand your frustration. I hate when people trivialize my eating habits by acting like "It's no big deal, just have a little." They don't understand how hard it is to maintain healthy eating habits and one little slip-up causes way too many problems to make it worthwhile.
