I don't know that I, personally, would go into the full-scale assault I would if the speaker were white (unless pushed, I guess; each exchange is different)... but you have the absolute right to ask them not to make bigoted comments in your presence.

For the second one, about the driving skills of people of a particular nationality, I generally respond that it doesn't have anything to do with nationality or ethnicity: that people who come from very crowded cities (like, say, New York) tend to drive more aggressively than people who come from less crowded cities.

OK, that makes sense. I'm from hicksville and my parents always freak out when they drive in the city about AGH CITY DRIVERS.

i think it's better don't think too much about whether or not the person has any credibility. maybe don't think of it so much as countering but sharing your thoughts/experiences. i think it would be interesting to know more about his experiences with chinese people/culture/society to see what makes him say what he says. 'oh i don't know, they seem alright to me...' or 'surely some people take showers.'

as for the second bit, as an american living in china for 2 years i have to say that driving in China is c-r-a-z-y. chinese drivers in china are nuts. but i'm sure what you're talking about is a really old stereotype that chinese are bad drivers in western countries. there's a video on youtube called "knight in yellow armor" that talks about that.
