Why not write about each subject individually (or short stories). It wouldn't hurt to see what you come up with. I got a lot of journals,it seems that they are not all fully complete and 40% was out of my teen years, ugh. However,if I ever decide to write out what are in those journals, I will have to change names and add content to make sure it makes sense. I hope you do go to school. It will be better to have some higher education under your belt than none at all.
One of Kevin's coworkers in Texas had much-older parents. He said it was awkward at school events but he got used to it. I think the fact that he had siblings over 15 years his senior complicated things too. (Full disclosure: I'm 10 years older than my younger sister, who is 7 years younger than her closest-in-age sibling. She's the first to tell people that she felt a lot like an only child.)
Re Scouting and the god thing, it's less of a stick in more liberal places. I know it's not much comfort, but several of my minimally- and non-religious friends got through the Eagle Board of Review by writing a religious statement to the effect of finding the sacred in the outdoors and only feeling a sense of duty to a nonspecific higher power.
I don't have any advice on getting published, but when you get to the point of needing proofreading/line edits, I can help with that.
