I felt like Little Susie Homemaker today. After work I went to the grocery store and then came home. As soon as I got home I took all three dogs out, started the laundry, and then started making dinner. I made this AWESOME spinach pie. I got the recipe from oona45. Click on the link below for the recipe. I tweaked it a bit from the original.


Ingredients:
2 packages fresh spinach (or ONE bag of frozen spinach)
1 package fresh mushrooms
1 large onion
5 egg whites
4 oz grated fat free cheddar cheese
4 oz grated fat free mozzarella cheese
8 oz (one triangular block) of asiago cheese
1 box Phyllo Dough see below
1 tsp pepper
1 tsp Cumin
1 tsp Basil
1 tsp Garlic Powder

- Preheat oven to 400 degrees.

- Remove stems from spinach and wash.
- Cut onions and saute in water or light olive oil until tender.
- Wash and slice mushrooms and add to the onions (cook until all water evaporates).
- Remove onions & mushrooms from heat a put in a large bowl.
- Saute spinach in water tossing frequently until all liquid evaporates.
- Mix onions/mushrooms & spinach together in bowl & make sure onions and mushrooms are evenly distributed throughout the spinach.
- Beat egg whites lightly
- Grate triangle of asiago cheese
- Add grated cheese to egg mixture and mix thoroughly
- Add spinach mixture to egg and cheese mixture and stir until mixed well. Add spices if you plan on using them.

Crust:
- Lightly grease baking dish with Pam
- Quickly layer 10-15 sheets on the bottom of the dish.
- Put your spinach mixture on top.
- Top with 5-7 sheets of phyllo, sprayed lightly with Pam between each layer.
- Remove any excess dough around the edges.
- Moisten your fingertips and seal around the edges like a normal pie crust.
- Spray top lightly with Pam.
- Bake in 400 degree oven for 30 minutes.

WARNING: Phyllo dough is sooooo thin it is a little hard to work with because it dries out in about 2 seconds and sticks together . There are hints on the box on how to keep it moist.

Another thing I did today was start on making my beta tank. I have an antique gumball machine on a stand and tonite I sealed off the bottom with aquarium sealant. I have bought red, yellow, green, blue, and white marbles for the bottom to look like gumballs. I am planning to go and get a beta for it this weekend or early next week. I will take and post a pic when it's all done!
