recipe: Crash hot potatoes

I've finally started keeping kosher*, and immediately realized that one of the "roadblocks" is that most of the potato dishes I know how to make involve one or more dairy products. I could just have a salad or some nice steamed green beans with my steak but...uh, no. Fortunately, I've been reading The Pioneer Woman Cooks on and off for a couple of years now, so this recipe was already in my mental file of Stuff to Try While Keeping Kosher. These are crispy and creamy in the same bite and altogether delicious. I used Yukon Gold potatoes and paprika, the latter because I was going by memory of the ingredient list and didn't actually buy any herbs. I also used table salt rather than kosher salt (ironies) because I don't actually have any kosher salt, and probably never will, since it's not actually a requirement for keeping kosher. I do like sea salt, but can't afford a decent grinder, and hate the prepackaged sea salt grinders at the grocery store.

*I mean this loosely, as I have yet to spring for new pots and pans, utensils, and dishes. But according to my sponsoring rabbi, effort counts more and I'm off the hook for the time being. Also, you can kasher a microwave by boiling a bowl of water in it for 20 minutes. Who knew?
