Did some gardening today. Mainly repotted a few plants and hung them all around the living room. It's so green in there.
Tonight I'm gonna make calzones instead of pizza. I've never made or eaten a calzone so wish me luck. It seems easy enough.
Does anyone have a recipe for lemon cookies that does not use a cake mix? Chris's dad has a lemon tree ( Read more... )

I've never used cake mix to make lemon cookies, but I do like to add lemon to shortbread or sugar cookies... And this is making me think I'd like to make some lemon bars!

I thought of that with the sugar cookies. I want sort of a tea cookies. I have made lemon icing for sugar cookies.
Most of the ones I found use cake mix which I don't tend to buy unless I'm making rum balls. (:

I have an amazing lime sugar cookie recipe that I used to often swap out lemons for. I can type it out for you if you'd like.

Okay, here it goes:

Lime (or Lemon) Sugar Cookies

1 c. sugar
1/4 c. butter
zest of one lime (or one lemon) - I like extra zest!
1 large egg
2 tbsp lime juice
1 3/4 c. unbleached flour
1/2 tsp baking soda
1/4 tsp salt

Cream sugar, butter, lime zest. Add egg and lime juice, stir until smooth. Add dry ingredients and mix. Make ping pong ball sized balls, flatten a bit on cookie sheet, sprinkle with additional sugar if desired. Bake for 8 mins at 350F, or until golden brown.
