So I have discovered that my cell phone service got changed to a plan that may or may not involve free nights and weekends, and definitely doesn’t involve rollover minutes

Um...I believe all old Cingular plans kept their rollover minutes when they converted to AT&T plans. Only the el cheapo plan has a limit on night and weekend minutes, which is 5000. Odds are if you don't use your cellphone constantly that should be more than enough for you.
If you are using the pay as you go plans then I have no idea how those changed.
Called CS Again Today...rakishanJanuary 7 2008, 19:54:12 UTC
Just to double check this, I called CS again today.
My current plan has 400 anytime minutes, no rollover, no night/weekend, and no mobile to mobile minutes. It is for $39.99.
The girl on the call suggested I change the plan over to the normal plan. That plan has 450 minutes, rollover, 5000 night/weekend, and unlimited mobile to mobile.
When she tried to do that, she got a block from the system. Apparently, they require me to get a new phone and sign up for a 2 year plan to do so.

Oh you has some super old plan that kept on rolling over and over didnt you. You dont use your phone much do you? Usually they have to notify you about any changes to your plan.
You seem to be in a similar boat to what happened to Dave.
Anyways, I think they have some super cheap/free phone you can get and then just have them switch your plan on your current sim. This way you can keep the current phone you have.
If you are looking for the European model good luck. Europe model is pretty much dead here in the States. The few "Pay as You Go" methods just really don't work here or aren't heavily subscribed.
You could always hold out and see what happens with the GPhone which may come out later this year.
