My mum used to do chocolate molds every Christmas when I was a kid - she made chocolates with maraschino cherries in them. What she had to do was get small paint brushes and paint the molds a layer at a time. It was time consuming to paint the chocolate but the inside of the chocolate firmed up nicely.
For your molds, you'll want to paint the writing first, build it up until it's almost level with the main part, then do a few layers with your milk or dark chocolate. Then just slowly build it up until it's flush with the top of the mold.
Small brushes work best if the molds are small or if they have a lot of detail, like the brushes that come with Crayola watercolour kits or similar, though real hair works better than plastic ones because they are more flexible. :)
