Coriander really makes the dish, in my mind. My favorite part. By the way, you can also add potatoes or cauliflower (add the potatoes earlier than usual) and it'll taste great.

how were you seeding the tomatoes? cooks' illustrated recommends cutting in half perpendicular to the polar axis and then squeezing them lightly so that all of the seeds fall out. it works pretty well.

My jabbing my thumb in, thereby displacing the contents and forcing them out of the approximately thumb-sized hole while my thumb is still inside! I can't possibly see why this creates a mess!
