It depends. What languages do you speak? There's no point in getting a girlfriend (or mail-order bride, for that matter) if you can't communicate with her.
But I think...yes, I think Spain would suit you nicely. Fun and interesting, but not snobby like France. And they have better food than the English.

If you get this before you leave, I solemnly charge you to say "Dra meg baklengs inn i fuglekassa" while you're over there. It's Norweigian for "Pull me backwards into the bird cage" but is commonly used as an expression of surprise, according to one of my friends.
