^^ I think that I've got a pretty good interpretation of the rabbits.
Rabbits are typically associated with the moon in japanese mythology. Instead of a man on the moon they see a rabbit pounding mochi. I think that Nii's fascination with rabbits stems from his obsession for Koumyou, who is the metaphorical moon in his mind.
^^ I have this notion that Ukoku has a sort of twisted love/hate relationship with Koumyou. Like in the Burial arc when Ukoku comes to visit Koumyou at the very beginning of the arc... At the end of their little scene it says something like... *checks* "You had to be careful with that silence. It could eat right into the darkness of the night." The darkness of the night is always Ukoku and it seems to me like those sentences are implying that Ukoku was feeling really lonely from the silence before he visits Koumyou

There's also a little something in the Burial arc where he watches ravens tear apart a rabbit and makes a comment about survival of the fittest. *grabs manga off shelf* Reload book three, the thought lines are "Eat it all. Don't leave a bone." And it's right after the eating through the darkness of the light lines too.
However, I do want to say that the rabbit in the moon thing was a beautiful point. Minekura seems to love indulging in tiny bits of detail like that.
I think it's just contrast. Give the cutest animal to the craziest guy for some weird contrast. I mean doesn't it all sound kinda screwy when you go talking to your friends "And he's totally awsome! He's like an evil genious! With a bunny wabbit plushie!" and then they kinda look at you o__o "uh huh right"
I read somewhere that the bunny is to ridicule Kougaiji, whom he calls the "Bunny Prince"... Just so you know... I read it somewhere... Can't remember where...
